Sparkling vacation pictures

Good morning. Sitting at a café eating my soy yoghurt and blueberries while waiting for my bus to go home to see my family. Vacation. It’s hard to relax when you’re constantly thinking of the competition in November, how to perfect the dishes, and of course, gold. I’m scrolling through all the pictures on different social media’s and everything looks so perfect. But there’s so much in between all the sparkling vacation pictures. My only expectations right now is to have some quality time with my family and closest friends, nothing else. I think you should too, enjoy your vacation with not too high expectations. Okay?

The little things

Got a dinasour as a "table number" at a breakfast place this morning. Thought it was unique and cute!

Oats with cloudberries and golden milk with a crazy, fun and caring friend. Oh yeah, and the croissant with coffee mascarpone and pistachio (she misread and didn’t know it was coffee flavored, and she doesn’t like coffee. So we basically only ate the croissant itself.) The oats was BOMB though!

Tomatoe plants

For about one month the tomatoe plants on our balcony has been slowly starting to lean downwards... Have I done something about it? Noooo, I pushed it to the last minute until the plants touched the ground. Bought some sticks and guess what, it took me two minutes to fix it.

Eating disorder

Would you believe me if I said that one of my fears a few years ago was eating a sandwich? Yes, a sandwich with butter, cheese or other topping, or just plain bread as it is. That was one of my greatest fears.

I lived on a very limited calorie intake and was mentally controlled, a sandwich or some bread could make me feel bad. It took me years to get comfortable eating bread, my so called weaknesses. I made bread become my weakness, because I removed it from my diet and made it as something "forbidden". And it just made me want it more. When I ate it, I started to overeat it.

Now many years later when I’ve had experience of different eating disorders, I can say that I learned that balance is the best and most important thing when it applies to health. I understand that this is the situation that occurs when you have "little demons" inside your head that controls your psyche, body, health and approach to food.

Today I eat bread without any problem. I eat with joy without feeling anxious afterwards, or fear that afterwards I will start to overeat or take methods to "get rid of what I’ve eaten." Balance and eating a little of everything is all that’s needed.

Hi guys. I’ve been very busy. I’ve been traveling, I’ve been working and I’ve been training. And everything between. It has happened quite some stuff since I last posted, and I can’t promise I will be able to recap everything. But I will try, ready?

Starting with a food picture. Had heared so much about this sausage place near a corner in Stockholm and just had to check it out. What can I say, the rumors can sometimes be true - good food, A LOT of food and cheap. Three yes!

I went on a weekend vacation to Copenhagen. Just some good food, exploring, and some time to relax. I loved Copenhagen and I will definitely go back.

Ran a race called "Toughest". 8km with 40 obstacles. It was hot as hell, but so fun! Thinking of signing up for the next race in August.

Me and my sister got invited by a friend an evening for a Pad Thai dinner. O. M. G. On the picture is one of the best pad thai’s I’ve ever had. And I’ve been in Thailand, eating many pad thai’s.

I competed in a cooking dual on stage at a food event a couple of weeks ago. The rules was: "Cook something that can be served at a restaurant under 20 minutes". We didn’t know what the main ingredient was until 30 minutes before, and what I was nervous about was the only 20 minutes we had. I was able to cook a two course dinner though and I won!

About past weeks

Wow. These weeks has gone by really fast, or maybe I've just had really fun on my days. So a quick update, my sisters husband was here for more than a week and visited us. He is a foodie just like us so on one of the days we had a really really really nice taco dinner at a restaurant. DELICIOUS! I've also managed to have a couple of dinner dates with some friends between practicing in the kitchen and work. A couple of days ago I got my home try-on glasses, I might want to purchase a new pair. Yesterday some of us from the team cooked and served snacks and oysters before the Eurovision final on the pre-party. We we're shocked (!) by how big the oysters were when the first one came. Luckily all of them weren't humongous. Diving into bed now. Goodnight!

Fat Tuesday

20.000. Twenty thousand semlor, BY HAND. That's how much we made today of these popular swedish buns. It's a bun with cardamom, filled with almondfilling and topped with perfectly whipped whip cream. And ofcourse, you can't forget the icing sugar that's powered on top. It's a big big big day here in Sweden and we take it seriously. I mean, doesn't 20.000 says a lot? I can't imagine how many semlor all the swedish people have eaten in total today. It's been a hectic day, starting at 2AM, cutting, filling, piping, finishing and packing. Well, it's only Fat Tuesday once a year. Now I'm just going to relax with my green tea the rest of the evening. See yaaaa.

Energy

I promised myself before the weekend started that I won't think about any training - not about work, the competition or the gym. This weekend I wanted to just hang out with my sister, cook, feel the fresh daily sun outside and just chill. And I did. I needed this, just some days of to just switch off "the real world" for a while. We just got back from a nice temaki-dinner with a friend, and we made apple pie too! Food and friends on a Sunday. 10/10! We are now wearing face masks to end a nice weekend! Going to dig into my bed so nicely tonight. Goodnight everyone.

1st February

Goodmorning! Going to work soon, just wanted to check in quickly. Had a busy training weekend with the team, but all the stress and hectic hours was worth it, because they give me such good energy. I haven't laughed so much in a while. Also my sister is back too from all her traveling and that's a big positive plus. Love coming home after working hours and training to have quality sistertime with her everyday <3. Time to go to work! Ciao Bellas.

Wille

A quick update before I dive into bed. Been spending many hours of my days in the kitchen, working and training, and when I'm not in the kitchen I try to catch some fresh air. It was a beautiful weekend, the sky was in pastel colors. Just taking long walks outside with no music and just hearing the mother nature is one of my top favorite activites to do. Such a beautiful world we live in. Yesterday I made an attempt to cook some food of the ingredients that we had at home. Well, it was edible, but my sister does it hundreds and hundreds times better. I made pasta and tomatoe sauce, and it's just never ever the same as my sister does it... Anyway! At least I cooked something, it feels like I cook maximum one time a month. Now it's bedtime! Goodnight fellas!
