One of a kind

Hey guys. Monday has already passed by, I feel like the days go faster than lightning. Except for work and training for the Culinary World Cup this week I have plans to do a running session with the Adidas team, squeeze in some intervals and weight lifting, make some pastillage roses, go on an interesting meeting and all in between hug my little brother while he is here visiting. Long day made short; Early breakfast before heading to (first day after vacay!) work, made 4000 buns, trained for Culinary World Cup, went to the gym and woke up my muscles, ran the fastest I could home, took a cold shower and now I’m sitting here writing this post and transferring some photos to my hardwire. Bed is calling soon, have a goodnight everyone out there.

The Barn

Let me just talk about this burger I ate while I was in Gothenburg. I had some expectations before going there, my brother and his friends had been there once and they said that "It was freaking amazing."  And then two other friends recommended me to go there too. And I did. We came right on time just before they opened up for the day, but there were already so many people standing outside waiting to be seated. Luckily we already had booked a table. We ordered our burgers and while we were waiting we could see the burgers flying out from the kitchen, we started to get so hungry and just hoped that the next burgers were for us. A couple of minutes later, it came.

Right in front of me I got a perfect stacked burger (reminded my of the Krusty Crabs burger on Spongebob.)

It looked so simple, but let me tell you. It was simple PLUS A LOT MORE!

Look at it! First bite, "omg", second bite "OMG!, third bite "This is the best burger I’ve ever had!". So juicy, creamy, flavorful, PERFECT. No doubt in the world that this is my favorite burger so far.

Perfect soft bun that catched all the juice, amazing maple syrup glazed braided (!) bacon, perfect pickled red onions and the mayo - SHIIIIIET! I loved everything about this. GO HERE if you are passing by Gothenburg. Just do it.

Smoke

Hey guys. One day in Stockholm has already passed by, and oh my, I really missed it. Feels good to be home again. To make a long story short (if you haven’t followed me on other social media’s I’ve updated on my stories) the trip took five extra hours long... FIVE! I arrived in the middle of the night/morning to Stockholm. At least it was an adventure! "It’s not the destination, it’s the journey." Will update furthe more today so check in later. And have a good day!

Bloody hell

Ed Sheeran. He was why I went to the other coast side of Sweden. It was my first "real" concert, and it was magical! Amazing, fenomenal, perfect and everything in between. LOVED IT. I’m going to sleep like the happiest baby tonight. Iiiiiiih, goodnight.

Projects

I talk a lot about the Culinary World Cup in November. I’m thinking about how important it is to be nice to yourself when a project is happening in your life. You know when you’re in a period when you have a project. That’s really important for you. It can be like working really hard to have money for something, an important exam, rehab training after an injury, or like now, the gold medal in November.

Projects takes energy and time, and it has the ability to devour your whole self. When this happens I know it’s so important  to take care of yourself. To not push yourself so freaking hard. To not keep up with this project at the same time when you want to have the perfect clean house - be the perfect sister, daughter and girlfriend - gym and train six times a week.

I’ve noticed myself how busy I am. I have together with thirteen other people one goal. We are in the middle of it and I have really hard time to focus on something else. That’s why I let go of everything else in my life (like that I rarely talk and see my friends, once a year if we’re lucky). Now these days I will try to relax from the thoughts of the competition and hug my little brother a lot!

Sparkling vacation pictures

Good morning. Sitting at a café eating my soy yoghurt and blueberries while waiting for my bus to go home to see my family. Vacation. It’s hard to relax when you’re constantly thinking of the competition in November, how to perfect the dishes, and of course, gold. I’m scrolling through all the pictures on different social media’s and everything looks so perfect. But there’s so much in between all the sparkling vacation pictures. My only expectations right now is to have some quality time with my family and closest friends, nothing else. I think you should too, enjoy your vacation with not too high expectations. Okay?

Oats with cloudberries and golden milk with a crazy, fun and caring friend. Oh yeah, and the croissant with coffee mascarpone and pistachio (she misread and didn’t know it was coffee flavored, and she doesn’t like coffee. So we basically only ate the croissant itself.) The oats was BOMB though!

Tomatoe plants

For about one month the tomatoe plants on our balcony has been slowly starting to lean downwards... Have I done something about it? Noooo, I pushed it to the last minute until the plants touched the ground. Bought some sticks and guess what, it took me two minutes to fix it.

Eating disorder

Would you believe me if I said that one of my fears a few years ago was eating a sandwich? Yes, a sandwich with butter, cheese or other topping, or just plain bread as it is. That was one of my greatest fears.

I lived on a very limited calorie intake and was mentally controlled, a sandwich or some bread could make me feel bad. It took me years to get comfortable eating bread, my so called weaknesses. I made bread become my weakness, because I removed it from my diet and made it as something "forbidden". And it just made me want it more. When I ate it, I started to overeat it.

Now many years later when I’ve had experience of different eating disorders, I can say that I learned that balance is the best and most important thing when it applies to health. I understand that this is the situation that occurs when you have "little demons" inside your head that controls your psyche, body, health and approach to food.

Today I eat bread without any problem. I eat with joy without feeling anxious afterwards, or fear that afterwards I will start to overeat or take methods to "get rid of what I’ve eaten." Balance and eating a little of everything is all that’s needed.

Hi guys. I’ve been very busy. I’ve been traveling, I’ve been working and I’ve been training. And everything between. It has happened quite some stuff since I last posted, and I can’t promise I will be able to recap everything. But I will try, ready?

Starting with a food picture. Had heared so much about this sausage place near a corner in Stockholm and just had to check it out. What can I say, the rumors can sometimes be true - good food, A LOT of food and cheap. Three yes!

A friend cooked steamed eggs for dinner one day, it was the first time I’ve had it. Love trying new stuff! Healthy and simple food!

I went on a weekend vacation to Copenhagen. Just some good food, exploring, and some time to relax. I loved Copenhagen and I will definitely go back.

Came back to Stockholm and went to a garden with my friends. I’m so happy I have so intelligent friends. They teach me something everyday! Like these potatoe "plants". Did you know that this is how you start to grow potatoes? Me neither...

Ran a race called "Toughest". 8km with 40 obstacles. It was hot as hell, but so fun! Thinking of signing up for the next race in August.

Me and my sister got invited by a friend an evening for a Pad Thai dinner. O. M. G. On the picture is one of the best pad thai’s I’ve ever had. And I’ve been in Thailand, eating many pad thai’s.

I competed in a cooking dual on stage at a food event a couple of weeks ago. The rules was: "Cook something that can be served at a restaurant under 20 minutes". We didn’t know what the main ingredient was until 30 minutes before, and what I was nervous about was the only 20 minutes we had. I was able to cook a two course dinner though and I won!
