Culinary World Cup 2018

I still can’t believe it. We’ve been waiting for this day for 18 months. And tomorrow we are finally, FINALLY (!) flying to Luxembourg to compete in the second largest culinary competition in the world. I’m so f*cking ready for this! WE are so f*cking ready for this!

The body said stop, and I just had to focus on myself for a while. To get better. Even though it still has been a hectic schedule I honestly feel happier, and more relaxed. I will go through a few things I’ve been up too lately so hang on!

One of my friends is the head baker at a bakery where they make Red Velvet Croissants. And! They. Are. Absolutely. Fabulous. I’ve just been helping them during their hectic months, they teach me a lot. That’s the best thing in this profession, you always have something to learn.

I’ve been taking many walks. And that has been one of my "medicines" to getting better.

It relaxes my body, my mind. And it’s getting a bit colder here in Sweden so the air is so fresh and stingy, I love it.

Morning walks are the best walks. Because it’s like the city have stopped and gone to "resting mode" for a while. No sounds, just the nature.

Two weeks ago the team and I cooked food for 450 people at a gala. These people were people from the restaurant world. If I was nervous? Yes! These pâté a choux one of my teammates made. He knows his stuff.

We got our suitcases last week. Can’t believe it’s nearly 20 days left to competition day. The day we all have been waiting for. Thousands of hours of practicing. Aaaaaah! Finally!!

Halloween. The coziest Halloween celebration I’ve had. With my sister, friends, good food (which was tempura, gyoza and kimball) and a spooky movie.

This is the last month in this apartment. We are moving in less than four weeks. Same week as the World Cup. I’m so excited!!!!

Burned out.

It’s been a rough year. I’ve kept telling myself that I have the energy, that I can do this, and this, and that, schedule everything with just seconds in margin. And many personal things that has happened during the year started to break me down mentally. Instead of taking care of myself, I put all the problems in a box in my head and put it away.


I started to work hard. Really hard. At work, after work, to nighttime. For ten months I’ve had a full time job, at the same time I trained daily with the Culinary Team, and also worked out a lot by myself. Gym, running, intervals, boxing, you name it. I worked extremely hard with minimal rest for a long period. 


The body started to talk. And it shut me down.


I started to understand what was happening just a couple of weeks ago. I burned out. I got really weak, and I’m still weak. Both mentally and physically. The first part, of admitting to yourself that you have to do something has been so tough. But I’ve gotten help and I have help. I know it’s a combination of broken self-esteem, the mental abuse, my inability to respect myself, the fact that I couldn’t set limits and let people walk right over me, the heavy workload combined with minimal recovery, my conflicts, my drive that I want to do everything at the same time and that I always allow everyone else to control me. 


I really love what I do, that’s why I never want to stop. But is it really worth giving it 300% every second of the day? Is it worth your health? Your physical abilities? Your mentality? Being sick right now, I’m telling you, is not fun at all. And I wish I started to listen to my body earlier.

Heeeey. Just wanted to check in and update real quick. This week I’ve literally just been working, training and running in repeat everyday. Kicking my ass so hard during the days and evenings that my sleeps at nights are sooo good. I even overslept two days hahah! Started to run with Adidas a couple of weeks ago and I’m really enjoying it. It’s a nice crew. Now I’m in a hurry to finish of the hours in the kitchen and then some Friday miles. Have an awesome weekend guys!

Hey guys. Monday has already passed by, I feel like the days go faster than lightning. Except for work and training for the Culinary World Cup this week I have plans to do a running session with the Adidas team, squeeze in some intervals and weight lifting, make some pastillage roses, go on an interesting meeting and all in between hug my little brother while he is here visiting. Long day made short; Early breakfast before heading to (first day after vacay!) work, made 4000 buns, trained for Culinary World Cup, went to the gym and woke up my muscles, ran the fastest I could home, took a cold shower and now I’m sitting here writing this post and transferring some photos to my hardwire. Bed is calling soon, have a goodnight everyone out there.

The Barn

Let me just talk about this burger I ate while I was in Gothenburg. I had some expectations before going there, my brother and his friends had been there once and they said that "It was freaking amazing."  And then two other friends recommended me to go there too. And I did. We came right on time just before they opened up for the day, but there were already so many people standing outside waiting to be seated. Luckily we already had booked a table. We ordered our burgers and while we were waiting we could see the burgers flying out from the kitchen, we started to get so hungry and just hoped that the next burgers were for us. A couple of minutes later, it came.

Right in front of me I got a perfect stacked burger (reminded my of the Krusty Crabs burger on Spongebob.)

It looked so simple, but let me tell you. It was simple PLUS A LOT MORE!

Look at it! First bite, "omg", second bite "OMG!, third bite "This is the best burger I’ve ever had!". So juicy, creamy, flavorful, PERFECT. No doubt in the world that this is my favorite burger so far.

Perfect soft bun that catched all the juice, amazing maple syrup glazed braided (!) bacon, perfect pickled red onions and the mayo - SHIIIIIET! I loved everything about this. GO HERE if you are passing by Gothenburg. Just do it.
